Agar-Agar is a product of natural origin (from red seaweeds) used to replace gelatin. It is ideal for preparing jellies, puddings and custards. It can be used in sweet and savory dishes. To use as a gelifier, it needs to be boiled in water until the solids dissolve. Then add flavoring, coloring, fruits or vegetables and allow it to set. Use 0.1 to 0.5% of total recipe.
