Vella Sonoma Select Dry Jack 8 Lb

This USA award winning original predates most “Artisanal” American cheeses by at least 60 years! Vella Cheese Company was founded in the 1930’s and have been making the same cheeses for years. Legend has it this cheese dates back to the gold rush in Monterey county created by a Scot named Jack. Flavor is tough to pinpoint, reminiscent of aged Cheddar with the sweetness and crunch of gouda. It’s unique shape is further enhanced by the rubbing of cocoa powder on the rind with oil and black pepper while it ages for up to a year.
