Manchego Raw Milk Aged 1 year 5-6#

A much more aged, much more developed cheese than regular manchego. Begins to take on a rough, crumbly crystallized texture and an elegant, mature array of flavors. At once powerful but smooth, best eaten in thin shavings, to allow the balance of nuttiness and fruit to shine through. Regular manchego will seem somewhat lacking after this.
